Our story

Built around a living culture.

Rising Sourdough Bakery is an Auckland micro-bakery devoted to bread with character: crisp, caramelised crusts, expressive crumbs, and flavour that only time can create.

01

Why we bake

Food should feel connected—to place, process, and people.

We began with a simple belief: everyday bread can be exceptional without becoming complicated. Our loaves start with flour, water, salt, and a mature sourdough culture. The rest is careful attention.

We mix in small batches, ferment slowly, shape by hand, and bake until the crust reaches a deep chestnut colour. The result is bread designed for real tables—morning toast, shared lunches, and the heel eaten on the way home.

What guides us

Four ingredients beyond flour.

01

Patience

Fermentation follows biology, not a production shortcut. We give every dough the time it needs.

02

Integrity

Clear recipes, recognisable ingredients, and honest communication are part of every bake.

03

Local rhythm

We bake for our neighbourhood in quantities that protect freshness and reduce unnecessary waste.

04

Generosity

Bread is made to be shared. Warm service matters as much as a beautifully opened crumb.

The bake

Country loaves, seeded rye, savoury sourdough, laminated pastries, and a small pantry of natural companions.
